- Start by heating olive oil in a skillet over medium-high heat. Season your chicken cutlets with a pinch of salt and pepper. Add them to the skillet and sear each side for 3-4 minutes until they’re golden brown and cooked through. Once done, remove the chicken from the pan and set it aside.
- In the same skillet, melt butter and add minced garlic and sundried tomatoes. Sauté them for 30 seconds until the garlic is fragrant. Pour in the heavy cream, bringing it to a gentle boil. Stir in the Parmesan cheese, salt, and pepper, and let the sauce thicken slightly. Add the fresh basil leaves and cook for another 30 seconds until they begin to wilt.
- Return the chicken to the skillet, allowing it to soak up the creamy basil sauce for a couple of minutes. The sauce will coat the chicken beautifully, creating a rich and indulgent dish.
- Serve the creamy basil chicken with a little extra chopped basil and Parmesan on top for an added burst of flavor.
