Caprese Salad

Caprese salad—also known as Insalata Caprese or “salad from Capri”—is a timeless and widely loved appetizer, side dish, or light lunch that’s both refreshing and simple to make.

Ingredients
  

  • 6 ripe and firm large tomatoes 
  • 1 pound fresh mozzarella, sliced ¼-inch thick
  • ¾ cup basil
  • 5 tbsp extra-virgin olive oil
  • sea salt to taste
  • Freshly ground black pepper to taste

Method
 

  1. Cut the tomatoes into ¼ inch slices. Sprinkle some salt over the slices and let sit for a few minutes to drain the excess water.
  2. Cut the mozzarellas into ¼ inch slices.
  3. Assemble the Caprese salad by arranging alternating slices of tomato and mozzarella directly on serving plates. Drizzle with extra-virgin olive oil and garnish with fresh basil leaves. Serve chilled.
